Ingredients:
Seasonal root vegetables (carrots, sweet potatoes, beets)
Winter squash (butternut, acorn, or pumpkin)
Leafy greens (kale, spinach, or Swiss chard)
1/2 cup split yellow mung dal (lentils)
Small piece of fresh ginger, grated
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp fennel seeds
1/2 tsp black mustard seeds
1 tbsp ghee (clarified butter)
4 cups water or vegetable broth
