Savor the warmth of winter with our Ayurvedic Winter Stew—a nourishing blend of seasonal goodness. Here's a quick guide to crafting this comforting dish:

Ingredients:

  • Seasonal root vegetables (carrots, sweet potatoes, beets)

  • Winter squash (butternut, acorn, or pumpkin)

  • Leafy greens (kale, spinach, or Swiss chard)

  • 1/2 cup split yellow mung dal (lentils)

  • Small piece of fresh ginger, grated

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 1/2 tsp turmeric powder

  • 1/2 tsp fennel seeds

  • 1/2 tsp black mustard seeds

  • 1 tbsp ghee (clarified butter)

  • 4 cups water or vegetable broth

  • Salt to taste

  • Fresh cilantro leaves for garnish

Instructions:

  1. Sauté cumin, fennel, mustard seeds, and grated ginger in ghee.

  2. Add chopped root veggies, winter squash, lentils, and spices. Sauté for 2-3 minutes.

  3. Pour in water or broth, bring to a boil, then simmer until veggies and lentils are tender (20-25 mins).

  4. Add leafy greens, cook for an additional 5-7 minutes.

  5. Season with salt, garnish with cilantro, and serve over quinoa or basmati rice.
